Ingredients:

  • 2 cups of long grain rice
  • 500 grams of meat (chicken, lamb or beef), cut into pieces
  • 1 large cauliflower, divided into florets
  • 2 carrots, peeled and cut in slices
  • 1 large eggplant, cut into slices
  • 1 large onion, cut into strips
  • 4 cups of chicken or beef broth
  • 1/2 cup slivered almonds, toasted (optional)
  • 1/4 cup pine nuts, toasted (optional)
  • 1/4 cup raisins (optional)
  • Olive oil
  • Spices: salt, pepper, turmeric, cumin, cinnamon

Instructions:

  1. Preparation of Ingredients:
    • Wash the rice well and soak it in salted water for at least 30 minutes.
    • Season the meat with salt, pepper, turmeric and cumin to taste.
    • In a large skillet, brown the meat in a little olive oil until well seared. Remove the meat and set aside.
  2. Preparation of the Vegetables:
    • In the same skillet, brown the onion slices until caramelized. Then add the carrots, cauliflower and eggplant, sautéing them lightly.

    • Pour the hot broth over the ingredients in the pot. The liquid should cover all the ingredients.

    • Bring the mixture to a boil and then reduce the heat to low. Cover the pot and simmer for approximately 30-40 minutes, or until the rice is tender and the liquid has been absorbed.
  6. Presentation:
    • When the Maqluba is ready, place a large plate over the pot and carefully turn it upside down to transfer the contents to the plate. This will allow the layers to be inverted, with the rice on top.
